250g fillet steak
8 mushrooms, sliced
1 vegetable stock cube
75g low fat soft cheese (e.g. Philadelphia)
16 asparagus stalks
Salt and black pepper
Place the asparagus in boiling water and simmer
Season the steak with salt and pepper, and grill for 4 minutes (for rare), 6 minutes (for medium) or 8-10 minutes (well done) – turning often. Once cooked, cover and set aside.
Add the stock cube to 100ml of boiling water, then place in a large frying pan and add the mushrooms. Boil until the stock reduces and thickens.
Add the soft cheese to the mushrooms and stir until blended, turn down heat and stir often until sauce thickens.
Drain asparagus and serve.
